Why seaming method changes the yarn total so much

Mattress stitch is worked from the right side, picking up just the bar between each edge stitch, which makes it both nearly invisible and the most yarn-efficient seam here — it uses barely more yarn than the seam's own length. A three-needle bind-off, by contrast, is really knitting a full row across two layers of live stitches at once, which uses roughly three times as much yarn for the same seam length; it's sturdier and faster if you can plan ahead to leave stitches live rather than binding off each square separately, but it commits you to that seaming method before you finish the squares. Backstitch seaming lands in between: sturdy and forgiving of slightly uneven edges, at a moderate yarn cost, which is why it's the default here for a general-purpose blanket.

How the total seam length is estimated

This assumes a mostly-filled rectangular layout based on your squares-per-row entry — every square shares an edge with its neighbor to the side and, except for the top row, with the square above it, so total seam length grows faster than the square count alone suggests. A 48-square blanket laid out 8 across by 6 down has more total seam length than the same 48 squares sewn into one long strip, because a grid has both horizontal and vertical seams where a strip only has one direction.

Seaming yarn doesn't have to match the squares

Many knitters seam in a slightly different (often smoother, less textured) yarn than the squares themselves, specifically because a seaming yarn needs to glide through stitches easily on a needle rather than show off texture. If you're using a special seaming yarn rather than leftover project yarn, this estimate still applies the same way — just set the yarn weight to whatever you're actually seaming with, not necessarily the squares' own weight.
